Spicy Hunan Potato

Hunan is in the mid-west of China, the food there is famous for a spicy and sour taste. There is a Hunan restaurant near our apartment in Beijing, which we call “The Cheap Place”. Small restaurant,  cheap price but genuine Hunan style dishes. We were the regular clientele of this restaurant. Once we had some friends come over,  we took them there, and there was one dish our friends fell in love with – Spicy Hunan Potato.
Spicy Hunan Potato
 
Ingredients:
2 potatoes
3 slices of streaky bacon
1 red chili pepper
1 green chili pepper
20g leek
20g celery
1/4 onion
1 spring onion
5g ginger
4 cloves of garlic
1 tbsp of hot bean sauce
2 tbsp of light soy sauce
1/3 tsp of dark soy sauce
1 tbsp of cooking wine
2 tsp of sugar
1/2 tsp of salt
cooking oil

Methods:
 
 
 
  1. Cut the potatoes into pieces with 0.5cm in thickness. Wash the potatoes with cold water twice to wash off the extra starch. Cut the streaky bacon into pieces about same size as the potato pieces. Cut the chili peppers, red onion, ginger, garlic and leeks into slices; cut the celery and spring onion into thin shreds about 3cm long.
  2. Heat up a wok with cooking oil, deep-fry the potatoes until they are golden brown in color. Take out for later use.
  3. Keep about 2 tbsp of cooking oil in the wok, fry the bacon pieces until oil comes out from the meat, take out the meat and keep the oil in the wok.
  4. Put spring onion, ginger and garlic in the wok to stir-fry until a nice smell comes out. Add hot soy sauce, stir. Add dark and light soy sauce, sugar, salt and cooking wine, mix well. Put potatoes, streaky bacon and rest of the ingredients in, keep stirring until the broth is all gone. Take out and serve.

    I’ve been looking for a recipe to make these potatoes after vising my son who was living in Changsha and we had this dish and it was wonderful. At last I have found a fabulous recipe and so like the real thing it’s untrue. Thanks you so much.
