Homemade Chinese Egg Pancake

When I was small, I use to spend summers at Grandma’s. My favorite breakfast was Egg Pancake Grandma made. Every time she starts making it, me and my cousin always run around her like little happy birds.It is such an easy, healthy and delicious breakfast.

Chinese Egg Pancake

Ingredients:

(serves two)
4  eggs
1/4  cucumber
2  spring onion
70g  flour
2g  salt
70ml  water
butter / oil




Method:

  1. Finely slice and dice the cucumber and spring onion.
  2. Crack the eggs in a bowl, add flour and water, mix until all ingredients are blended. Then add the fine chopped cucumber and spring onion, salt and mix well.
  3. Heat the pan, add a slice of butter, wait until the butter melts (or you can use oil if preferred), then pour a large spoon of the egg mixture onto the pan. Turn the heat to low, give it about two minutes, then flip over carefully to cook the other side until both sides have a beautiful golden color.Enjoy!
Tip: Personally I prefer to scrape the cucumber into shreds first, then give it just a few chop, much easier.
