Fried Rice with Bacon and Vegetables

After a delicious curry dinner last night, we still have a lot of cooked rice left. So I decided to make fried rice today. Fried Rice is one of the most popular dishes in Chinese restaurants, but you know you can make it at home easily.
 
Fried Rice with Bacon and Vegetables

Ingredients: (serves 2)

300g cooked rice
1 egg
2 slices bacon
1 small carrot
1/2 bell pepper
1/2 onion
1 spring onion
1 clove garlic
1 tsp salt
cooking oil

 

Methods:

 
 
  1. Cut the bacon and vegetables into small cubes of approx 0.5 cm.
  2. Crack the egg in a bowl, mix well. Heat up a pan with 1 tbsp of cooking oil over strong heat. When the oil is hot, pour the egg in. Keep stirring the egg until it becomes small chunks. Take out.
  3. Add 2 tbsp of cooking oil to the pan, heat up over strong heat. Put 1/3 of the onion and the garlic on the pan, stir-fry until you get a nice smell. Then put the bacon in, stir until a change in color. Add the remaining onion, bell pepper, carrot and salt in, stir for about 3 minutes.
  4. Turn to low fire, put the rice in to stir-fry for 2 minutes. Add the egg and spring onion in and mix well. Take out and ready to serve.
Tip: 
Remember to turn the heat to low to stir the rice, otherwise the rice may stick on the bottom of the pan and burn very easily.
